A Salad A Day was created because I have wanted to share fun and simple recipes for salads for some time now.

I hope to share excitement for eating “A Salad A Day,” or thereabouts with as many people as will try to! A salad can be a meal, a side or a main event!

Do you make your sandwich so large and full of veggies that it falls apart when you try to eat it? Then these ideas are for you! Ditch the bread and pick up a bowl and a fork and re-make that sandwich into a salad! Seriously, toast the bread, add some butter and a bit of garlic and salt and enjoy it with your salad!

Salads are beautiful and delicious! They can be something you throw together from what you have around, or it can be carefully calculated to tantalize the senses.

I hope my many years of salad making can inspire you to eat well, be happy and to try something new! Bon appétit! 

Salads and I go way back, and I’ve been picking up tips along the way from friends, family and restaurants over the years.

One of the things I like about salad is how it doesn’t have to be one particular way, and I don’t ever feel like I get it “wrong” even if a key ingredient is missing. It’s one of the ways I’ve been able to practice creativity in my life and curb perfectionism — because salad is very forgiving. It still tastes good, you can’t burn it, and if you have something in the refrigerator or cupboard, chances are you can make a salad!

Salad doesn’t just have to be lettuce and tomatoes with your favorite dressing (although that’s delicious with a little bit of Parmesan). Salad can also be made predominantly with protein and herbs. Creativity is alive and well when you combine ingredients to create unique flavors that excite your tastebuds. A salad can bring people together for a meal and a good conversation.

Sometimes it makes the time sweet because the prep work of the meal has been completed already, and all you have to do is add the dressing and serve. OR, my personal favorite, put together what you are cooking WHILE entertaining and make it a fun way to spend your time together with friends and family while tossing together fresh ingredients and then enjoying it as a side, or the main dish!
